Palestinian Chicken dish Recipe |
Ingredients:
4 chicken Legs ( manthi size cut )
4 large onions
sumac
Salt and black pepper to taste
olive oil about half a cup
pine nuts for decoration
Bread for serving (I used Iraqi tanour bread)
Preparation:
In a saucepan on the fire, put a little olive oil and fry the chicken a little.
Then add to the chicken water, bay leaf, cardamom, cinnamon stick (darsin), salt and a little black pepper and let it slide
Cut the onions into slices (not very light) so that they do not melt during frying.
In a saucepan, put an appropriate amount of olive oil, add onions and a pinch of salt, and saute until it wilts completely.
Then add about 2 tablespoons of fish and a pinch of black pepper and stir.
Now that the chicken is boiled and the onions are browned, we will add about half a cup or a little more of the chicken water to the onions and stir them.
Preheat the oven to a temperature of 210 degrees Celsius from above and below and let it heat up until we prepare the heater tray.
We need an oven tray or a Pyrex wiped with olive oil.
Now the bread must remain in size without breaking.
We will dip the bread into a mixture of onions and fish (like one who has soaked bread with water and fat) but without cutting the bread.
Then we lift the bread and put it in the tray and add a little onion on top.
We make layers of bread and onions until the quantity runs out.
It means bread.onion.bread.onion
Now drain the chicken from the water and put the chicken on top of the bread.
Wipe the chicken face with olive oil and sumac.
We enter the oven until the chicken is browned and the sides of the bread are crispy.
After we get out of the oven, we decorate with roasted pine nuts.
If pine nuts are available, almonds or any nuts you prefer.
Notice:
Al Musakhan is a dish based on olive oil and fish. I mean, the amount of olive oil must be visible and its taste apparent. And cooked with a second butter.
Everything is good, since the Iraqis need to wish. The most appropriate side of the chasm is the red wish.
And yogurt and cucumber salad.
