FRUIT PIE
Pastry base/crust ingredients
Material :
200 gr butter (sy margarine & butter)
100 gr castor sugar
1 tbsp grated lemon zest
2 egg yolks
350 gr wheat flour (blue key)
How to make:
1. Beat well: butter, sugar and lemon zest (until smooth)
2. Add the egg yolks. Just mix well
3. Add the flour little by little while stirring with a spatula
4. Stir well. Do not stir by hand. Krn dough will be hard
5. Wrap with plastic wrap. Put in the fridge for about 30 minutes.
How to print the crust:
1. Prepare 2 sheets of paper/plastic uk 25x25, a rolling pin and a 8"/20 cm pie pan (without smearing)
2. Roll out the dough between 2 paper/plastic, the dough should be wider than the pie pan.
3. Print on a pie pan, skewer and oven 170ºc, melt 20-25 minutes (depending on each oven)
4. Remove from the pan and set aside. Let cool
Pastry cream
Material:
500 ml liquid milk
4 egg yolks
100 gr sugar
60 gr cornstarch
2 tbsp custard powder
1/2 tsp vanilla extract/ rum
How to make:
1. Mix all ingredients, strain
2. Heat on the stove over low heat, stir with a balloon whisk until thick (like making eclairs stuffing)
3. Remove and stir until the custard is cold, then add the vanilla extract/rum according to taste
Fruit topping :
Kiwi, canned mandarin oranges, red wine
Solution:
Pour the pastry cream over the pie then arrange the pieces of fruit on top, let stand a moment so that the pastry cream cools. Ready to enjoy

Chocolate Dough Ingredients:
100 gr margarine
30 gr cocoa powder
70 gr DCC
200 gr white granulated sugar (blender)/caster sugar
1/2 tsp vanilla powder
2 beaten eggs
Sift into one:
75 gr wheat flour
1/2 tsp baking powder
1/4 tsp salt
Cheese Dough Ingredients:
150 gr cream cheese
60 gr flour
45 gr margarine
45 gr sugar
2 eggs beaten loose
1/4 tsp vanilla powder
How to make :
1. Prepare a 30x10x4 insulated baking sheet, polish margarine and line it with baking paper/pan without partitions, you can adjust it
2. Chocolate dough:
Mix margarine, DCC team over low heat until melted. Add sugar, vanilla, mix well, add eggs, mix well, using a whisk, until melted and shiny (sugar is dissolved), add flour, cocoa powder, baking powder, salt and mix well. Pour the chocolate mixture into the tin, set aside a little
3. Cheese dough:
Beat with a low speed mixer cream cheese until soft, add margarine, sugar, eggs and vanilla while blending, add flour, mix well (for a while)
4. Pour the cheese mixture over the chocolate dough, while smoothing it out
5. Pour the remaining chocolate mixture that was set aside earlier, put it on top of the cheese mixture by spreading it, using chopsticks or a fork to make a zigzag motion on the dough until it forms a marble
6. Bake in the oven at 180 delci, 40 minutes, 10 minutes over high heat, adjust each oven
