How to make Lebanese hummus |
Ingredients:
*2 cups chickpeas, soaked in water from the night before with 1 teaspoon of bicarbonate of soda *4 tbsp tahini 1 lemon, squeezed *2 garlic cloves, crushed Salt to taste
How to prepare:
1. Drain the chickpeas from the soaking water, then put them in a saucepan over a high heat, add the water and boil them well for 30 to 50 minutes.
2. Remove the boiled chickpeas from the heat and drain them, then put them in an electric mixer, keeping the boiling water. 3. Puree the chickpeas in a blender until you get a soft dough.
4. In a bowl, put the tahini and dissolve it in a tablespoon of boiling water. Add the crushed garlic, lemon juice and a teaspoon of salt. Mix the ingredients well until you get a white liquid sauce.
5. Add the chickpea paste to the bowl and mix well.
6. Add lemon juice and salt as desired. 7. Transfer the chickpeas with tahini to a serving plate, garnish with mint leaves, cumin or some boiled chickpeas.
