Recipe for Making Fruit Pudding
Fruit Layer Material:
1 1/3 cups water
2/3 cup syrup from canned lychee
1/4 cup sugar
13/4 tsp agar-agar flour (I added 1/3
bks nutrijel plain)
2 cups small fruit according to taste/prepared fruit
cut pieces
Coconut Milk Layer Ingredients:
3/4 cup coconut milk
1/4 cup water
3/4 tsp + 1/8 tsp gelatin powder (me
add 1/3 bks nutrijel plain)
3 tbsp sugar
A pinch of salt
4 inches pandan leaves/optional
Bottom Layer/Juice Layer Ingredients:
3/4 cup fruit juice according to taste, if not thick
can be added to 1 cup juice but not
use water at all.

How to make:
1. Fruit layer, in a pot: pour water, lychee syrup &
agar), mix well. Then cook until

same as the previous layer. (Boiling ingredients
the layer of juice should not be too long, just enough
soluble agar).
6. Pour a layer of juice slowly in
over a layer of coconut milk. Let cool, store in
refrigerator until hardened
7. Remove from the mold, serve
